Description

Aldehyde C19 is a traditional perfumery name for Allyl Hexanoate, also known as Allyl Caproate. Despite its name, it is not chemically an aldehyde; it is an ester. Its odor is highly distinctive, with a strong sweet, juicy, tropical pineapple character accompanied by fresh, fruity and slightly green nuances. Atul lists it specifically as an aroma ingredient used to enhance pineapple, fruity, sweet and juicy odors.

In perfumery, Aldehyde C19 is primarily used as a high-impact fruity modifier. It is especially effective in pineapple and tropical-fruit accords, but can also contribute to peach, apricot, apple-blossom and other fruity-floral effects. Its bright character can make a fruity accord feel more immediately recognizable and juicy.

Because of its strong odor impact, it is best handled at low levels and evaluated from a dilution. It is particularly useful when constructing pineapple, tropical, fruity, fresh and playful gourmand compositions. Its short-lived top-note character also makes it useful for creating an immediate fruity opening rather than a long-lasting base effect.

Perfumers' Tip

Aldehyde C19 is one of the most useful materials for creating a recognizable pineapple effect. Start with a low dilution and build the accord around it rather than allowing it to dominate the composition.

For a more realistic tropical pineapple effect, combine it with fruity esters, lactones and green materials. Adding a small amount of vanilla or ethyl maltol can turn the fresh pineapple character toward a sweeter, candy-like gourmand direction.

Catalog note: “Aldehyde C19” is an established trade/perfumery name, but the chemically accurate name is Allyl Hexanoate (Allyl Caproate).
