2-Acetyl Pyrazine is a trace-level powerhouse. A tiny amount can transform a gourmand formula into a convincing popcorn or roasted-grain accord. Combine it with Maltol, Ethyl Maltol and Vanillin for sweet popcorn or caramelized effects, or pair it with coffee and cocoa materials for a darker roasted accord.

For a more realistic popcorn effect, balance its roasted character with buttery, creamy and caramel notes rather than increasing the pyrazine dosage. Too much can quickly become harsh, burnt or overly savoury.
