Description

Acetoin, also known as Acetyl Methyl Carbinol, is a distinctive aroma material with a characteristic creamy, buttery and milky odor profile. It has a soft, slightly sweet quality that can give compositions a rich and rounded sensory character.

In perfumery, Acetoin is primarily used as a specialty creamy and buttery modifier. It can be useful in gourmand, dairy-inspired, caramel, vanilla and creamy accords where a natural buttery nuance is required. Because of its distinctive character, it is generally used to support a composition rather than serve as its main fragrance note.

Acetoin is also relevant to flavor applications, where its creamy and buttery character can contribute to dairy, baked and sweet profiles. In fragrance work, it can add realism to unusual gourmand concepts and soften sharper sweet materials.

Perfumers' Tip

Acetoin is best used as a trace-level creamy and buttery modifier. A small amount can make vanilla, caramel and milky accords feel richer and more realistic. Combine it with lactones for a creamy effect or with vanillin and benzoin for a warm gourmand base. Start with a highly diluted solution and increase gradually, as its buttery character can become dominant at higher levels.
