Description
Aldehyde C16 is a classic fruity perfumery material with a distinctive sweet, strawberry-like, jammy and slightly floral character. Despite its traditional perfumery name, it is important to note that Aldehyde C16 is not chemically an aldehyde. It is ethyl methylphenylglycidate, an epoxide ester with CAS 77-83-8.
In fragrance construction, Aldehyde C16 is primarily valued for creating strawberry, red-fruit, berry and sweet gourmand effects. Its character is more reminiscent of ripe strawberry preserves or strawberry syrup than a fresh, watery strawberry. It can add juicy sweetness, warmth and body to fruity-floral compositions and is especially useful when a formula needs a recognizable strawberry signature.
The material works well as a fruity modifier alongside floral, vanilla, caramel and woody materials. It can also help round out playful gourmand compositions and create a richer cooked-fruit effect. Because of its strong character, it is best evaluated from a dilution so the perfumer can control the balance between strawberry sweetness and its waxy-fruity facets.

For a strawberry-gourmand direction, try pairing it with ethyl maltol, vanillin and creamy lactones. For a fresher berry effect, use it with floral materials and lighter fruity ingredients rather than pushing the dosage too high.
