Description
Furfuryl Mercaptan is a highly potent sulfur-containing aroma chemical known for its distinctive roasted coffee, burnt, meaty and sulfurous character. At very low concentrations, it can provide remarkable realism and depth to roasted and cooked-food effects. Its intense odor means that it is generally used as a trace-level modifier rather than a main fragrance ingredient.
In perfumery and flavor-inspired fragrance creation, Furfuryl Mercaptan is particularly useful for building coffee, roasted, tobacco, savory and dark gourmand accords. It can add the realistic roasted character that may be missing from a simple coffee or chocolate composition. When carefully combined with sweet materials such as vanillin, maltol and caramel notes, it can create a convincing freshly roasted effect.
Because of its exceptional odor strength, Furfuryl Mercaptan should be handled and evaluated at very high dilutions. Excessive use can quickly make an accord harsh, burnt or unpleasant.
