Description

Propionic Acid is a short-chain carboxylic acid with a very distinctive sharp, sour and pungent odor. Its profile is characterized by acidic, fatty, fermented and slightly cheesy nuances. It occurs naturally in certain fermented foods and contributes to the characteristic aroma of some dairy and fermentation processes.

In perfumery, Propionic Acid is primarily a specialty trace material rather than a conventional fragrance ingredient. Its strong odor can be useful for creating realistic dairy, fermented, fatty, sour and animalic effects. It may also be used in experimental accords where a small acidic facet is needed to make a natural or unconventional composition more convincing.

Because Propionic Acid has a very strong odor, it should be evaluated at high dilution. A tiny quantity can introduce a noticeable acidic character, while excessive use can quickly dominate the fragrance and produce an unpleasant sharpness.

Perfumers' Tip

Propionic Acid should generally be used at extremely low levels. It can add a convincing sour or fermented edge to dairy and animalic accords when used correctly. Prepare a strong dilution first and dose from the dilution rather than working directly with the neat material, especially when constructing delicate or complex accords.
